These were trade secrets up until 1900, most people have never heard of them even today: who would pay high price for those granite/marble countertops otherwise? We only know of clay, concrete, plaster, mortar and cement and we are also being told that some of these have been invented within last 500 years, etc. The truth is that the most popular house building material since dawn of humanity was mud/clay mix applied on top of sticks. People added ashes, straw, limestone, gravel, sand and whatever else they had around. Since pottery people baked all other types of dirt to see what happens and it also happened accidentally. Limestone is everywhere. Thus concrete, cement and similar mixtures must have been independently invented dozen times in Stone Age, nevermind the Middle Ages.

The secret of poligonal blocks precisely aligned with each other is based on same artificial stone technology. Polygonal blocks are layed layer after layer. Once the bottom layer is dry/hard enough, another layer of "playdough" blocks are put on top of it. Being still moist and plastic, each block fills all the gaps. If the surface of the wall is not fenced by something flat, blocks "get fat" under their own weight. This technology didn't require any mortar or much skill and was good enough for thick massive walls. Why wouldn't they just quickly/once pour the mixture into wood framing like we do today? Because flat woodboard requires sawmills, otherwise it's too expensive. Massive polygonal block walls mean absence of saws or wood.

The blocks, while they are soft enough, are intentionally pressed from top/sides to form a polygonal shape, to increase cohesion with blocks that will be added later (Cusco, Peru):
